Whole Wheat Honey Oat Sandwich Bread

This year I’ve really been trying to bake most of my own bread. I’m not perfect, I do buy bread from the grocery store when I don’t have the time or energy to bake my own. Which is often with a toddler running around. But there’s just something about the smell of homemade bread filling the house.

One of these days I’ll commit to baking sourdough bread regularly but, until then, I’ll be whipping up easy bread recipes like this honey oat bread. I love that you basically just throw everything into the mixer and let it do it’s thing. No need to over complicate bread making!

Honey Oat Sandwich Bread

This honey oat sandwich bread is so soft! It's perfect for sandwiches or toast and comes together quickly and easily.

Equipment

  • stand mixer fitted with hook attachment

Ingredients
  

  • 2 cups boiling water (454g)
  • 1 cup rolled oats (89g)
  • ½ cup brown sugar (106g)
  • 1 tbsp honey
  • 4 tbsps unsalted butter
  • 2 ½ tsp salt
  • 1 tsp cinnamon
  • 1 tbsp active dry yeast
  • 1 ½ cups whole wheat flour (170g)
  • 4 cups all-purpose flour

Instructions
 

  • In the bowl of a stand mixer, combine boiling water, oats, brown sugar, honey, butter, salt and cinnamon. Set aside until lukewarm, about 30 minutes.
  • Add the flours and yeast and stir by hand to form a rough dough. Place the bowl on the mixer fitted with a hook attachment and mix on medium/low speed until smooth and elastic, about 10 minutes.
  • Transfer the dough to a lightly greased bowl, cover and let sit until doubled in size, 1-2 hours.
  • Divide the dough in half and shape into loaves. Place in two greased loaf pans, cover and let proof another hour of two.
  • Sprinkle with oats and bake at 350°F for 35-40 minutes or until the internal temperature is at least 185°F. Cover with foil halfway through the bake so the tops don’t brown too quickly. Let cool, slice and enjoy!
