In the bowl of a stand mixer, combine boiling water, oats, brown sugar, honey, butter, salt and cinnamon. Set aside until lukewarm, about 30 minutes.
Add the flours and yeast and stir by hand to form a rough dough. Place the bowl on the mixer fitted with a hook attachment and mix on medium/low speed until smooth and elastic, about 10 minutes.
Transfer the dough to a lightly greased bowl, cover and let sit until doubled in size, 1-2 hours.
Divide the dough in half and shape into loaves. Place in two greased loaf pans, cover and let proof another hour of two.
Sprinkle with oats and bake at 350°F for 35-40 minutes or until the internal temperature is at least 185°F. Cover with foil halfway through the bake so the tops don’t brown too quickly. Let cool, slice and enjoy!
