Honey Oat Sandwich Bread

This honey oat sandwich bread is so soft! It's perfect for sandwiches or toast and comes together quickly and easily.

Ingredients
  

  • 2 cups boiling water (454g)
  • 1 cup rolled oats (89g)
  • ½ cup brown sugar (106g)
  • 1 tbsp honey
  • 4 tbsps unsalted butter
  • 2 ½ tsp salt
  • 1 tsp cinnamon
  • 1 tbsp active dry yeast
  • 1 ½ cups whole wheat flour (170g)
  • 4 cups all-purpose flour

Instructions
 

  • In the bowl of a stand mixer, combine boiling water, oats, brown sugar, honey, butter, salt and cinnamon. Set aside until lukewarm, about 30 minutes.
  • Add the flours and yeast and stir by hand to form a rough dough. Place the bowl on the mixer fitted with a hook attachment and mix on medium/low speed until smooth and elastic, about 10 minutes.
  • Transfer the dough to a lightly greased bowl, cover and let sit until doubled in size, 1-2 hours.
  • Divide the dough in half and shape into loaves. Place in two greased loaf pans, cover and let proof another hour of two.
  • Sprinkle with oats and bake at 350°F for 35-40 minutes or until the internal temperature is at least 185°F. Cover with foil halfway through the bake so the tops don’t brown too quickly. Let cool, slice and enjoy!
